A Altheim, il est noté la présence d'une brasserie dès 1645. Cette brasserie a appartenu à la même famille depuis 1777.
La brasserie prend son nom actuel en 1869.
En 1999, elle passe dans les mains de Christoph DHERIAU et son épouse Doris RASCHHOFER, fille de Georg et Gertrud
RASCHHOFER.

Le château ALT STARKENBER est construit de 1309 à 1339, détruit en 1426, puis reconstruit et vendu en 1780 à
la famille STRELE.
En 1810, Anna STRELE commence la production de la bière. En 1847, elle y construit une véritable salle de brassage.
En 1879, le brasseur Hermann GASSNER, de la brasserie KRUMBACHER et son épouse Johanna, de la
brasserie OTTEBEUREN rachètent la STARKENBRAUEREI. Ils y font quelques aménagements
comme l'électrification (1891).
En 1898, Max Ulrich prend la brasserie en main et y commence une vaste modernisation.
Malgré les dons, l'entreprise de la famille OTTEBEUREN est mise en faillite en 1902...
En 1908, C. KAPFERER acquiert la brasserie et continue les modernisations de Max Ulrich : 1910, le premier camion pour le transport de la
bière est acheté.
En 1919, Rudolf SCHATZ et son épouse Hertha, la fille de C. KAPFERER, prennent la tête de la brasserie. Il faut
reconstruire la brasserie...
Au cours de la seconde guerre mondiale, elle subit le sort de toutes les brasseries, la production réduite vu le peu de matières premières pouvant être utilisées
(ils ont même tenté d'utiliser la betterave à sucre).
En 1956, la fille aînée de Rudolf et Hertha prend les rênes de la brasserie et en augmente la production : 1955, 12 000 hl et
1972, 35 0000 hl.
Après des négociations difficiles pour l'héritage, le couple AMANN prend la direction de la brasserie en 1984, et ils y font quelques
améliorations : 1984, extension de la salle de brassage, 2001-2003, construction de la cave de fermentation et de stockage, 2003-2005, construction de la STARKENBERGER BIERMYTHOS : c'est un musée qui retrace l'histoire de la bière du château de STARKENBERG sur une surface de plus de 4 000m². Vous pouvez même y prendre des bains de bières... c'est la première piscine de bière au monde (12 000
litres d'eau pour 300 litres de bière).
Depuis 2008, Martin STEINER dirige la brasserie avec une trentaine d'employés, et produit 35 000 hl...
